Our friend, Janet was over last Friday night and she made her version of Poke (pronounced po-kay) a traditional Hawaiian dish.  Janet can throw down in the kitchen and people are always asking her to open a restaurant, but the thrill for her is cooking from the heart for her friends and family, she envisions what they like and uses her magic to concoct a tasty dish.  She gets most of her cooking inspiration from dining. When she eats a dish she likes, she will go home and create her own version and her trick is to not measure, but eyeball everything. We decided to make an impromptu stop at the market to pick up the ingredients for Poke, and voila 20 minutes later it was ready along with some glasses of red wine, and lucky Steph who happened to be at the front door just in time to sample the dish.  This is an easy to prepare dish that’s a unique option to bring to a party!
